Dec 15th, 2016This has put on a surprising amount of weight since release, when it was more juicy and bony. Now the fruit has taken on darker tones and a thicker, more gummy texture. In fact it was almost grapey at first but settled down into a more of a "pinotette" profile, with some of the stony / granite personality that makes Carquelin such a notable site. It does still have a slight sizzle of co2 that was hidden under the fruit at first but made this feel a little sharper as the fruit mellowed.
