2021/5/8 with youshoku chicken cutlets. Initially there’s something like a high-hogo aged Jamaican rum here - toasted vegetal and tropical funk. But I don’t mean that as a criticism or a flaw - it’s an aspect that sometimes appears in aged Burgundy, and the nose here initially feels mostly tertiary. But with air and time, wild berries and raspberries appear - the old Benjamin Button trick. There’s wild mushroom, toasted cinnamon and clove, sandalwood, lapsang souchong and something like tiramisu too. A surprising amount of fruity flesh balanced by lip smacking acidity. Considering the asking price and the sheer age on offer, a ridiculous bargain.
