Fermented in SS vats. Aged for 3 months.
Light yellow gold, pale brass glitters.
Piquant nose of med intensity: crushed white pepper, morning fog, citrus honey, horseradish leaf, apricot jam, tarragon, marjoram, green apple peels, pomelo pith. Pineapple and lollipop. Light whiff of lychee syrup.
Zingy and tingly palate. Medium to plus (12.5%) body, bracing acidity. Lovely mineral. Alycha, citrus mix (lime, pomelo, white grapefruit), green apple, unripe melon, quince, touch of herbs.
Lengthy finish expressing citrus peels, crushed stones, quince.
Paired pizza with Gorgonzola and pear.
