Straw yellow, water rim. Lime peel, lemon peel, melon, smoke on the nose. Thyme on the nose. Melon, lychee, underripe mango on the palate. Very well put together and bright. Served with what may have been the best scallops dish I have ever had in my life.

Golden apple, honeycomb, brown pear, peanut shells, creme brûlée, gardenia, slight sea breeze. Excellent acid balanced by rich creamy slightly oily texture, medium bodied, long mineral driven finish with hints of honey. Drinking beautifully now, will age graceful in another 5 years.
