Honeycomb, bread yeast, amazing acid and texture. Buttery but so acid. Good concentration. Unbelievable quality for the price.

Tastes like sour melons dusted with candied chili powder, bruised apples, and mezcal. Juicy, with surging acidity. Wonderful, especially as it warms.

Wild. Smells like Fino Sherry but tasted like muscat. Intense, sweet and savory all at once.

Dec 26th, 2016Fuller bodied, lots of ripe pineapple, almost grilled pineapple, amazing with Thai curry. Fascinating to try such a rare variety grown here in CA, there is so much potential for our baby industry.
