Day 1 Notes: Too tight, green pepper, rest my friend we'll check back tomorrow.
Day 2 Notes: Nose has red meat, tarry cherry/ripe plum aromas. Palate has minerally black cherry, touch of acidity lingers, leather, dried leaves/soil and a hint of plum skin. I do believe this is still opening up, likely to leave some for tomorrow.
Day 3 Notes: Nose and palate picked up coffee, bittersweet chocolate and deep black cherry flavors. Yum, gone!
