Bride of the Fox Junmai Ginjo Sake

Baked apple and pear, honey, wet stone, and sea salt. 50% milled 🍚, oxidative. The two characters on the label mean land of iris.

my date is super repulsed by this because of the umami flavors but i really love it!

Eccentric SF retailer said if I found him a sake to drink w his tamale pie, he'd bring it in. This fleshy 50% milled junmai ginjo w notes of stewed rhubarb and dashi-rich umami did the trick

Almonds & brioche

Deliciously balanced, clean, fruity, floral.

Drank over 6 weeks opened in my fridge and it stayed fresh throughout. Richly layered aromas and flavors of chocolates, pistachio, green grapes, and honeydew melon with floral undertones. Savory but offset by some residual sugar. Sufficiently robust for the main course. Really nice.

Smells of mushroom and funk. Perfect creamy mouth feel. Papaya, Pine. A little too sweet.

Crisp and delicious - almonds, minerals and just what I'd like in a saké.

Sweet and dry

A fuller bodied sake whose label reads: fragrant, crisp, pure. Medium priced for a 300 ml bottle. It has a slight metallic taste that takes away from the floral tones. A quality junmai ginjo, but not my favorite. Cheers!
