A unique style of Txakolina to be sure, due to their estate being 50km inland from Getaria on higher ground and in clay soil. Certified organic (only producer in the D.O.) and bottling with only naturally occurring CO2. Plenty of weight and texture from lees aging, pair this with shellfish and other white proteins like you would Chablis or Muscadet.

👅 Holy high acidity, Batman. Green apples, pineapple core, a touch of salinity and pith of grapefruit to round out this lean Spanish specimen.
✍️ While interesting to taste, this is a good wine for food pairing and not meant for consumption on its own...unless you like War Heads in a glass.
