First day in San Sebastian I found this bar where they serve patrick piuze's chablis, ganevat's tout beauté and l'anglore's rosé by the glas. This is the txakoli they pour: salty, mineral and vivid! Great pintxos too by the way.

The first (and only?) organic Txakolina. Natural fizz (not added), unfined & unfiltered. Fresh, salty and savory. Brought this home from my fantastic trip to the Basque Country last spring. Apparently Bengoetxe means 'come home' in the Basque language... I take that as a sign.

I imagine that these vines got the shit beaten out of them. Every lick of sugar cost something. The acidity was earned. Every vintage of this is delicate and delicious - lightness wrung from rocks.
