Curry, celery, coriander before citrus, stones, spice and chalk. Wow.
At once reductive and oxidative, yet is neither. It is fresh, complex and faceted with a “memory of oxidation”.

The grapes that are harvested from Clos Sainte Sophie are aged either in an old Vin Jaune barrel from Ganevat, a barrel from Mâcon-Solutré or a barrel that used to age Cognac.
