A stunning wine fermented with indigenous yeast in 3000 liter neutral old oak cask, matured in the lees for 12 months (more recent vintages are lees aged for 2 years!) and then held at the winery in bottle for 4 years before release. Bright lemon-green color and loads of savory lime zest, canned pineapple, lemon curd, apricot, wet stone and petrol. Great depth and intensity of flavor balanced with high acidity and an endless finish. Dazzling.
