The only rose champagne available on the Bouley at Home wine list. A great choice for the diverse menu we tasted that night. goes well with the subtle flavors of sushi and mushrooms to slightly fatty meats and custardy uni. Pretty austere on the nose and palate on a first sip though.

Developing nicely with time in the cellar. Juicy apple, lemon zest and lemon peel fruit with kiss of minerals and yeasty aromas. Generous in the palate with apple and lemon peel fruit flavors. Bright acidity but with a lush round quality. Lengthy mineral focused finish.

Dynamite Champagne with great citrus fruit tones to accent a focused minerality. It displays great texture and weight. I am sure it will develop greater complexity with cellar time.
