These hiyu wines continue to expand my knowledge of what wine can be. This is brawny and earthy and floral and forest all at the same time. It’s amazing how it changed with pesto pasta. There’s a smell of fresh cherries and almonds. Good tannins and mouthfeel. There is this peppery earth meat flavor that is just fascinating. I love it but it is not typical of any wine I’ve ever tried.

Dec 24th, 2021The nose is wonderful. Dark fruits, forest, flowers, hint of black olive. Tannins on the palate, more fruit, some game, pepper. Really interesting. Went wonderful with dinner. I’ve never had a wine like this.
