Interesting wine. Almost like a sparkling wine but without bubbles. Lots of apple 😄

Beautifully aromatic wine with apple and citrus notes and having acidity. Crisp without being tart, the wine has a silky texture and is long on the palate. It has just enough of an herbal overtone to go beautifully with pasta and pesto - the acidity cuts through the olive oil in the pesto. Surprise pairing - the wine is good with fried and grilled foods as well and lovely with ceviche and other acidic dishes

Did I wait too long? Plenty of acidity, with hay, white flowers, and matchstick notes (but not unpleasant.)

2025. Brought a bottle of this Txakolina, which is one of my go to seafood wines, over to my friend’s tonight. He ended up grilling skirt steak, broccolini, and spicy homegrown peppers. The little bit of spritz and nice acidity worked great with dinner!
