For Christmas I made a large smorgasbord with the intention of featuring this delicious Blanc de Blancs. It's delicacy and balance are shown with great finesse. Not overly foamy, a consistent column of fine bubbles simply rise from the bottom of the glass. Pears, honeysuckle flowers, soft lemon curd créme, macadamia nuttiness, and a dry, mineral finish make this a top pick under $100 Champagne in my book. Went best with simply triple créme Brie, dried figs, and ripe strawberries.
