This is very interesting. Treat this like a sparkling and enjoy over a few days. At first it’s a little bright and has a metallic finish. Champagne stoppered and much better on day 2-4. This tastes bone dry, but with the bubbles your brain is expecting a little sweetness but it never comes! If you close your eyes and forget about the bubbles and smell this in the glass you’d guess a very good still rose from Provance. If you tasted this and forgot about the bubbles you’d guess the same as all those flavors and minerals are there. Enjoy a glass each day and see how this evolves and you’ll really see it shine. WF
