I have minimal experience with sherry, but this was better 1-2 days later. It had more air and was also colder from sitting in the fridge than from the cellar. It was fantastic and better with chorizo charcuterie, cheese and cornichon. Salty, saline, almond, olive and and spirits flavors and aromas. #frasiercrane
