This single vineyard blend of roughly even parts Chardonnay and Pinot Noir is aged partially in Foudre. The vineyard is planted on a site that was the scene of a terrible fire over 100 years ago, thus the name Sendre which means ashes. Presented by Charlene Drappier at the Ordre Coteaux Champenois dinner.

The Drappier Brut Grande Sendrée is a refined blend of 55% Pinot Noir and 45% Chardonnay. The house prides itself on minimal use of sulfur and low dosage—the 2006 is voluptuous with layers of dust, walnut shells, and mahogany wood that serve to hem in fleshy, ripe orchard fruits and citrus notes. On the palate, the mousse is super fine, merging with bright acidity and wet dough on the back palate. This is a Champagne that I would like to revisit in a decade or more, certainly I am keen to watch its development.

Golden color with enticing, but subtle buttered toast, almond, dried orchard fruit aromas. On the palate it's full-bodied, and layered with a creamy delicate mousse, vibrant acidity and a harmonious character that shows orchard fruit, raspberry, candied tamarind, Meyer lemon flavors. Long finish. Blend of 55% Pinot Noir, 45% Chardonnay; including 32% wines matured in oak barrels for 9 months. Aged 6 years on lees after bottling. Dosage: 5 g/1
