This was the shiz. Reminded me of French Onion Soup with that oniony, cheesy thing going on. Savory and delicious.

A bitter almond note, with grilled lemon, and loads of minerality. The palate was medium+ in body with excellent balanced acidity, no oxidation character. #jura #savagnin #geekwine

This superb wine is my first Savignin from Côtes-du-jura. It has a fine pale golden hue which exudes fine notes of lemon, apple blossom and a hint of walnuts. Round and generous with wonderful acidity, I’m sure this wine will cellar really well and be equally enjoyable after several years of aging. We elected to pair this beauty with a hot smoked salmon, asparagus-ribbons, and capers in a lemon zest, creme-fraiche sauce accompanying a delicate angel hair pasta. The entire meal and wine pairing was perfect.

I think this is the purest expression of Savagnin I can remember. Brisk acid & loads of tension backed with vibrant apples. Hints of floral aromatics add complexity. Perfect wine for a spring night.
