Was getting the craziest flavor spectrum profile. It was all smooth oxidation, roasted nuts with that steely hint of vinegar tone all rounded out but still very animal and poultry on the whole. The oxidation thing doesn't really seem like actual oxidation perhaps as well, seems maybe a characteristic of the terroir? This one is quite wild, great with a meal.
