Sigalas Kavalieros 2011, 14% alcohol, Santorini, Assyrtiko. Single vineyard site, 18 months on lees. Mineral, almost earthy, salty, lime. Medium bodied with lots of depth, almost dark for Santorini Assyrtiko. Dense, chewy, sharp acidity, lots of backbone, explosive finish with a lime attack that holds its ground.
