Popped and poured; no formal notes. Consumed over two days with consistent performance both nights. “Les Fôrets” is a lieu dit inside of Montmains. Romain ferments in a combination of 90% cement egg and 10% foudre. This is my kind of 1er Cru Chablis. There is an abundance of energy. Bright, crisp tropical fruits that lean more towards the star fruit side of things. There is lemon citrus and loads of minerals. The oak treatment is extremely light and imparts more to the texture than anything else. The finish is long, refreshing and super satisfying. Really lovely stuff.
