Tradition Arbois Chardonnay Blend
Spooky pairing tonight : rolet arbois tradition white from 2009 and a home made spiced-up egg fried rice. A lovely pairing as the oxidative notes of the wine complement quite well the dashes of soja sauce we threw in there and the great acid drive is a perfect match to the fluffiness of the rice / egg. Great pairing!
The nose is very oxidative with sour apple notes, nuts, butter and some flowery notes too. It smells almost like and old white port. The palate is a model of balance with a massive acid backbone that makes it a very, very long wine, a good width, some nutty notes, some apple touches, a great mid palate that expends into the form of a ball shape, before a long, fresh, crisp, extremely precise finish that lasts for ever. This is definitely not your every day wine but I love it and the pairing with egg fried rice is divine!

The palate is wonderful, very dry with lots of acids, a very wide and dry presence, some grip, a bit of a buttery touch on the sides, almost a tannic thing in mid palate like a kind of kick, some green apple, and a very long finish with apple and a bit of pepper. This is so good! I remembered this wine being too dry and a bit unbalanced, this is now very precise. A food wine.
