Having my dessert first. Co-fermented field blend of Alsatian varietals. Viscous texture, plenty of sweet flavors of course but not to the point of being cloying. Honey cake, dried apricot, orange, acacia, a little petrol and botrytis, acid is not front and center but playing a strong supporting role to hold things together

Golden color. Nose and flavors of flowers, honey, white and tropical fruits. Great mouth feel and long finish. Needs a touch more acidity for balance. Seems quite sweet. Fascinating wine that just keeps evolving thru the meal. Pretty high geek quotient.

Really great stuff. Tropical and white fruits with a bit of peeled banana. Seems quite sweet but with great mouth feel and length. For me, slightly out of balance, with a bit more acidity in order. Still wonderful and a hoot to drink with 2 people who had never had his wines.
Pan sautéed fresh halibut over cous cous with sautéed aromatics.
