Fruit is nicely ripe and a touch tart. Black raspberries, raspberries, dark cherries, dry cranberries, baking spices, good earthiness, crushed rocks and soft chalk. Nice balance, acidity and elegant finish.

Feb 27th, 20163 hrs slow ox. On the nose: black cherry, toast, earth, soft funk...lovely aromatics. On the palate: lovely acidity, a touch of heat, black cherry, spice, vanilla, toast, chalky tannin on the juicy finish. Lovely already, but we'll see what tomorrow brings.
Day 2: drying a bit. Either drink up or wait another 10+ years.

Medium minus ruby. Raspberry, squid ink, pepper. I really don't like red Burgundies made in a New World style. Medium plus acidity, medium minus sugar, medium alcohol.
