I’ve had now the La Boutanche wines from three producers and the ones from Le Sot de l’Ange are far and away my favorites. This Pet Nat is really well spun prioritizing thought and patience over rush to market. A mix of Sauvignon Blanc and Chardonnay. It has great effervescence with yellow apples, baking spice, and yeast. Surprisingly polished.

Revisiting this a year later. Some of the fruit has slightly faded but still an excellent value.
