An extremely special Cab Franc enjoyed over 3 hours spent in Austin, Texas's BarleySwine. It opened up nicely, first showing with big pyrazine notes, violets, and red cherry before evolving into something jammier and riper, but with huge tannic structure and grip to match. Blackberry, bramble, garrigue, stewed black cherry, sweet corn, blueberry, a bit of underlying earthiness. Some herbal piquancy on the nose to match the green pepper notes. Very lovely.
