I opened this while sautéing garlic and sweet onions. Tasted it as I added steamed potatoes and sweet kale from the garden. The wine’s transition tracked the vegetables: soft silky, then earthy, tannic, and a subtle bitter hit at the back of the tongue as the veggies charred. Then the acidity opened as I added tomatoes and Parm to the dish. 😍
