Very nutty and serious. Classic sur voile aroma. A blast of tart yellow fruit juice on the attack, all on the mineral side. Then this seems to drop off on midpalate only compared to the start and finish, which are tuned to volume 11. The finish just demolishes, goes on forever with walnut, preserved lemon, slate. But then every sip is a different experience. Really a wine of intrigue.
Wow days in the fridge and this has become insane. So much more dense, savory and chewy. Really curry notes are building.

To me Chardonnay doesn’t do as wall as Savagnin in this style. The structure and definition are a little overwhelmed by the oxidative notes. Still fun to taste and quite profound but lacks energy.

Jan 4th, 2021This is a delightful wine. Nose of walnut and green apple. Straight up umami on the palate: super concentrated, rich, salty, seashell, mineral, textured, delicious thing, with a loooong finish. So precise and balanced. Silly great value. Paired with leek au gratin and kale minestrone. Perfection.

Apr 11th, 2020Aldehydic/oxidized nose of apple cider vinegar, fungus, leather, almonds, etc. Rich, salty, and moderate acidity but bright with minerality. Probably intended for younger consumption, at least in a riper vintage like this. Need to try a 2010

Feb 3rd, 2018So good! Lightly oxidized, almond nuttiness, bees wax ...the Somm kindly inquired if I understood what I ordered. Hehe I got a kick out that. (Shame to think people must be returning these once they don't get their "buttery/malo" fix).

The point of interest for our tasting group today was the cheese rind salinity/bitterness that many of these Jura whites showed! I love this kind of funky bitterness. The nose and palate showed honey or more accurately some floral nectar as well as a lot of savory, baked squash notes which I always love!
