A classic. Light on its feet, fresh, easy drinking and crisp enough to lift the food. Reductive, though. Decanted for about four hours and it still needed more time.

Like burying your nose in a bowl of violets. Smooth, light, peppery, mildly tannic. The more it opens up and the more I drink the less I like it. It becomes more and more peppery and savory and tannic.
