I've never quite seen the point of Aligoté, but this one is more interesting than most. The level of acidity here is almost overwhelming, and the fragrance of apples almost creepy it's so clear. Shines like the sun but I'm not such a fan myself of this stainless style of white Bourgogne. Crab cakes?
