In a nice restaurant in my parents' city near Toulouse with a surf and turf theme. I'm having octopuss legs with risotto and it goes well with it. It was a bit reductive at first with flinty notes that blew away after a while. Honey, wax, apple notes. There are some minerally notes too. Could it be chalk? The palate shows a massive acid backbone, some apple and honeyed notes, and a long and fresh finish with the same notes that goes on for a long while. Good stuff and great pairing!
