Del Dotto Caves
Napa Valley Cabernet Sauvignon
Time for my #FridayCabernetfix. This week it's a fabulous Cabernet from Napa Valley.
Deep ruby in color with a wide reddish/ brick rim.
Great nose of blackberries, blueberries, cherry pie, figs, raisins, cedar, vanilla, licorice, eucalyptus, light cloves, light vegetables, pencil shavings, tobacco, leather, earth, mocha, chocolates, alcohol, medium roast coffee and peppercorn.
Full-bodied, bold and smooth, with medium acidity and long legs.
Dry and extremely fruity on the palate with blackberries, black currants, plums, cooked cherries, oak, vanilla, licorice, spices, tobacco, chocolates, light vegetables, mocha, peppercorn, leather, earth, graphite, herbs, cola and vinaigrette.
Long, long finish with fine grained tannins and tangy raspberries.
What a wonderful Cabernet this is. Well balanced, extremely fruity, rich, extracted, Jammy and spicy. Just delicious.
Good right out of the bottle, but so much better when it opens up. Complexity comes in with nice tannins and it becomes less jammy.
Needs a couple of hours to open up, and I used the V spin for a long while, probably 30 minutes.
This is one of the better Cabs I've had in a while. The nose is exptional. So nice to just smell on it for a long time. And the finish is very long probably a minute long, full of fruits.
Drinks very well now, but will be even better in 3 to 5 years. Probably a 98 pointer by then. A blend of 75% Cabernet Sauvignon, 22% Merlot and 3% Petit Verdot.
I paired it with cheeses, olives and crackers.
Thank you Elmer for sharing this delicious wine.
15.5% alcohol by volume.
96 points.
$75.
