Signature Napa Valley Cabernet Sauvignon
This was paired with grilled bison ribeyes and it was a knockout pairing! Needed just about 5-10mins to blow off some funk. Very berry driven aromatically with fresh squeezed red and black fruits, licorice, and cedar. Decanted for about an hour and the tannins were completely softened. Boysenberry, currant, dark chocolate black cherries and cherry liqueur oozing over baked figs. Hard to say this will get better, but when paired with lean bison meat, the fruit cut through it perfectly.

May 29th, 2017This took a loooong time to show up. Opened for 6 hours, then double decanted. Still needed two more hours to show its colors. Tannic monster with amazing black fruit. Bright acidity suggests 15+ years ahead of it. Bad ass wine! Tastes several other vintages at the winery last summer. This was by far the best.
