Chateau Pegasus, Naoussa 1997, 12.5% alcohol. 100% Xinomavro. Poured one glass, tight and tannic, although the aromas jumped at me. 24 hours fast forward: Vegetal, olives, barnyard, toffee, raspberries. This has opened up so much, tannins still grip, but the wine comes across mellow, there is a lot going on. Very elegant, solid on the mid-palate, with a very strong and long lasting finish that is very much dominated by pure fruit. This wine is now 16 years old and could be easily mistaken for being much younger. Complex, multi-layered, drinks perfect now, but there is no rush. This will keep. Would be sublime with dry aged steak. Just amazed to see the difference one day of oxygen can make.
