Second wine of Chateau Haut-Bailly, blend of 60% Merlot, 30% Cab Sauv & 10% Cab Franc, deep Ruby with aromas of black fruits, cassis and flinty notes. On the palate flavors of blackberry, red currants and juicy blueberry with cedar notes and baking spice. Firm tannins, medium acidity ending tangy with fruit and mineral finish. Very Nice value!

Haut-Bailly Dinner in SF with Veronique Sanders of Haut-Bailly.

The La Parde is fresh, bright, ripe, dark fruit & easy to drink young. The La Parde will be renamed as Haut-Bailly II with the release of the 2018 vintage. They are also releasing a third wine Haut-Bailly III and a Rosé wine beginning with their 2019 vintage.

Served with Gnocchi a la Parisienne. The best Gnocchi we’ve had outside of Italy @Mathilde French Bistro

Wine will improve 2-3 points with 7-10 more years in bottle.

Used a Corvin 3X over 6 months, still fresh, great product. Second wine of Chateau Haut-Bailly, a blend of 60% Merlot, 30% Cab Sauv & 10% Cab Franc, deep Ruby with aromas of black fruits, cassis and flinty notes. On the palate flavors of blackberry, red currants and juicy blueberry with cedar notes and baking spice. Firm tannins, medium acidity ending tangy with fruit and mineral finish. Very Nice!

This wine doesn't contain any huge fruit or spice but instead presents as a remarkably complete wine, overall. Only the tannins stand out, but the wine is an absolute joy to drink, no pairing required. Just a wonderfully complete wine that stands tall all by itself.

Tasted this blind and couldn't decipher exactly what it was, but what it definitely wasn't was my kind of Bordeaux. It was extremely smooth but weak, lacked fruit and earthiness, and can't live up to the price. Had hopes for this one, but just didn't come through.
