Crushed oyster shells, wet rock, pears, and slight honey dominate the nose. Bright, and acid driven, more oceanic minerals and saline, seaweed, rich apples and pear, brioche and a touch of honey. Lingering minerality and acidity. Elegant, delicate, but with poise and strength. Can’t wait to see this mature and continue to improve. A real treat.
