Vintage 2013 | Limoux AOC Chardonnay with a splash (15%) Mauzac. It is lovely to taste young, now at 8 years old too 😊 cream butter babbler in smell, melon, pear, honey impression, very quaffable and a lovely balanced taste. I am fan of this wine. Beautiful name, beautiful wine| Paired with sea bass in a salt crust, tomato courgette burrata from the stove.

Jul 12th, 2020Vintage 2013 / Wednesday Meatballsday (2) / today a house favorite Meatballs with chicory stewed in beer - a Flemish recipe / so often it is advised to open a relative simple red wine with meatballs, but why not white? This Limoux from 85% chardonnay and 15% mauzac does the trick. It has a few bottle years which gives it a golden reflection. Smell with a smoky touch, impressions of tropical fruit like ananas and a royal buttery taste.

Aug 21st, 2019Vintage 2013 - expressive lovely bouquet with at first violets and then butter, orange marmelade. A juicy taste with citrus, pear, great balance. Chardonnay feels at ease here, wine is made with 15% of the local Mauzac grape.

Sep 6th, 20162011 is very round, expressive bouquet. Made of 85% chardonnay - a grape that's doing great in Limoux - and 15% mauzac. A nose with citrus, pear and Guadeloupe melon. I met winemaker David Serodes a few weeks ago, a nice modest guy, with clear views. He recommends this wine with Thai food, the best combination he tasted until now. I combined the wine with spaghetti vongole, halibut and goats cheese. Each combination was OK.
