a red custom-built for salty smoked salmon (or bacalao!), almost genetically so, it’s a perfect fit. a saline, astringent, difficultly bitter and very polarizing sipper becomes plush, aromatic, fruit driven and prolifically nuanced with the pairing....blood iron, raspberry, about-to-be ripe strawberry, bush-herbs, tart cranberry, and back to waves of salt and iodine on the finish. as if the ocean rolled over the vines and left a dusting of salt and dried blood, and the color expresses it beautifully - wtf!
