Underripe strawberries, raspberry bitters, sourdough bread, cheese rind. Great round acid, medium bodied, more fizzy than bubbly, tart dry meaty/sour beer finish. Minimal intervention pet-nat, perfect for summer. Wine profile with beer texture.

This is one of the most unusual wines I have possibly ever had. An amazing Spanish sparkling rose that has petrol on the nose (yes, it's a Rose) and stinky cheese. A brandied color and loses its effervescence after only a few minutes (beer cap!?!) and just went so well with a variety of dishes. I probably would have thought it to be a cider if I didn't know better. Not quite ripe strawberry and certainly not for the everyday wine drinker for sure, but I quite enjoyed the experience.

I asked for unusual and boy did I get it. Tangy with a bit of sweetness plus that wild(ish) yeasty thing. Great rosé #color. Fun!
