Dry with Slightly sweet finish

High acid but tasty. I let this open for several hours before it was enjoyable to me as I’m very sensitive to acid.

Med + acid, med - sugar, med + body, floral and apple aromatics, coating mouth-feel, beeswax, white peach, lemon curd, a bit of minerality/salinity

Paired great with Mediterranean baked salmon and quinoa

Had at black cat dinner. Very good
