I have no time for most pinks, but it was a steamy night and the ice-cold espumoso cut through the heat and my preconceptions. Lemon, acid, salt, and stone back up a fruit profile that thankfully never approaches the Jolly Rancher hard candy style so prevalent in most rosès.
