Dinner at Val’s. More elegant and complex than the aligote, without the searing acidity.

From 25-year-old vines in Tharoiseau, in front of Vézelay; planted on a pretty, east-facing hillside with a base of marl and limestone. Cultivated organically. Both alcoholic and malolactic fermentations took place in barrels. Aged in 20% new barrels. 2,944 bottles produced.
[Winemaker’s notes:] “Expressive nose of white flowers, hawthorn, brioche and lemon zest. Supple and fruity attack in the mouth, followed by a saline and mineral finish which marks the length in the mouth.”
