The tight pineapple profile on the first day has mellowed to reveal layers of lemon, white grapefruit, barrel notes, fennel and dried grass notes. Stainless steel and acidity masks a med++ body. Decant for now. Could be amazing with Elotes. For aging, Id easily hold another 3, and drink within 5. Flavor profile is not one that I can envision with stronger aging notes.
