I then had another bottle a couple of months later and found it to be mediocre. Not sure if it's a quality issue or what but I'm averaging my rating based on the variance.

Very smooth. This actually paired very well with "adult" grilled cheese made with Swiss, tomato, and soft Italian cheese.
