Bright unripened cherry and wood ear mushrooms..

Soft, bright, appealing, aged perfectly, classic bramble fruit. The body seems to drop for just a moment before being kicked up again with sweet tart grit, and ending with a long wave of acidity.
Perfect wine for my Christmas stick.
