Pretty amazing!
Paired with lamb chops and Mediterranean salad.
Nose on the wine is complex. Nice blend of tannins, pepper and fruit. TheCab has softened a bit as the taste profile brings a nicely structured blend of fruit, spice and soft leather. Glad we still have 4 bottles in the cellar!

This 3L met it's (un)timely opening as droplets of wine were found protruding from beyond its wax seal, and thus, to avoid sipping a wine having won its race toward its inevitable decline of becoming vinegar, it had to be opened straight away. Everything happens for a reason. The first wiff packed a powerful punch of a still perfect Rutherford Cabernet by one of the state's oldest wineries. As it opened up, the palate mirrored the visual rim variation of fine, aged Cabernet: smooth as a criminal in a Michael Jackson song, complex, structured with precision with a finish teenage lovers between the sheets would envy. Oh what a night! I concur with Wine Enthusiast's tasting notes that just like me, this Beaulieu Vineyards 2001 Rutherford Cabernet Sauvignon is showing alot of wood.

Nice full body 100% cab! Very consistent the entire way down. Though I enjoyed it in a tasting room with only breadsticks, I could imagine it going well with any New York strip or ribeye.
