Anima mundi Camí dels Xops 2019 M. Ancestral Macabeo/Xarel-lo. Pale lemon, clear despite the wine being unfiltered. Medium intensity aromas of brioche, lemon peel, and orange blossom, fully developed. Dry, Medium(-) fruit on the palate. High acidity, there's a hint of tannins maybe? Definite textural complexity with a delicate mousse (froths up but dissipates quickly), medium alcohol and medium (-) body. The flavors echo the aromas, with emphasis on the lemon peel, seconded by yeasty/brioche, with a long finish on a prominent note of saline minerality. This wine suitable for aging but ready to drink now. Extremely interesting, evolving, and delicious!
