Hard to find anything other than superlatives for this. We finished a third today and are looking forward to how it evolves open over how many additional days we have the patience to sip without finishing it.

There are few wines that speak so clearly of a place and time. Sublime. Raisins of the white wine Assyrtiko in the Grecian island of Santorini, 20 years in French oak, some bottle age. It has umami and honey, sweet and tart but in a perfect balance.

Greek honey. Green figs. Manages to be non-"raisiny" and way more mellow than a tawny port.
