Albillo with a touch of age. This is Bosc pears crushed with a granite mortar and pestle. Great texture. Not quite "nervy" but there's definitely an eye tic going on.

Some pretty, delicate peach pit and white floral tones. A seductively pretty nose. But it lacks verve and the extract it needs to carry its massive loads of alcohol.

Super acidic, lighter-medium body. Worked well with lamb and pasta bolognese.
